Gambero Rosso Itália 2010: Os Tre Bicchieri - 2ª parte

O guia italiano de vinhos Gambero Rosso premia os melhores vinhos do país com "bicchieris" ou taças/copos, em português. Avaliação Nacional de Vinhos na era digital!

A décima oitava Avaliação Nacional de Vinhos – Safra 2010 entra para a era digital. A Embrapa Uva e Vinho, apoiador técnico do evento, acaba de implantar um sistema próprio de informatização de análise sensorial. A implantação do sistema ocorreu ainda no dia 16 de agosto, quando iniciou a degustação de seleção das 260 amostras inscritas na Avaliação.
A novidade chega para garantir maior agilidade e segurança no processo de avaliação. Com isso, os resultados gerados são simultâneos, obtendo o relatório final sem interferência humana e com maior rapidez. Ao término das avaliações, é possível gerar um extrato do resultado por avaliador, com as notas individuais, do grupo e a mediana. Além de registrar pontuação, o sistema permite, ainda, inserir comentários.
Com excelente funcionamento, o sistema permite fazer a pontuação discriminada de cada vinho tanto no aspecto visual, quanto no olfato e no paladar, podendo gerar relatório individual por amostra. Isso possibilita enviar às vinícolas, informações dos vinhos como instrumento de avaliação para investimentos na melhora da qualidade do produto. Também é possível gerar a performance de cada avaliador, a fim de estabelecer comparativos e análises.
Desenvolvido pela BF2 Tecnologia, de Caxias do Sul (RS), contempla os mais diversos projetos de pesquisa, apresentando diversas plataformas, dependendo da ação a ser desenvolvida, de seus objetivos e da metodologia de avaliação.
A degustação de seleção, que é realizada no Laboratório de Análise Sensorial da Embrapa Uva e Vinho, encerra no dia 3 de setembro. Nesta edição, o evento reúne 260 amostras inscritas por 55 vinícolas de sete Estados brasileiros.

Em breve, a tabela de safras da Itália...

Existe espuma além da Champagne?!

Acabei de degustar alguns espumantes muito interessantes na Grand Cru: 3 cavas da Castellroig (Espanha), 1 espumante da Argentina (Novecento Extra Brut), 1 do Uruguai (Pizzorno Brut) e 1 de Portugal (Quinta da Pedra Alta Brut). As cavas espanholas (Brut Rosé, Brut e Brut Nature) apresentaram uma grande uniformidade qualitativa, com destaque (por uma questão de estilo) para a Cava Brut Nature. Porém, olhando pelo lado do custo benefício, a Cava Brut se coloca como a mais atrativa (custando quase a metade da Brut Nature: R$57 contra R$93). Já a espumante argentina, com seu nítido aroma de maça verde se sobressai no quesito preço (R$29), tendo um conjunto bastante fresco e seco. A espumante uruguaia (Pizzorno) é mais modesta e apresenta um certo amargor final, deixando um pouco a desejar (R$65). Como era de se esperar, o melhor veio ao final, com a espumante Quinta da Pedra Alta Super Reserva Bruto (comentada recentemente no Enoblogs) que é surpreendente! Aromas muito próximo a de uma boa Champagne (pão torrado e amêndoas), perlage fina, grande frescor e complexidade na boca. Dominada pelas castas portuguesas Viosinho e Rabigato, proporciona grande complexidade e textura marcante. Por R$79, pode se dizer que é um grande achado para os apreciadores exigentes de espumantes. Recomendo!

Com uma safra desastrosa neste ano, a Europa só emplacou um vinho na lista, um Eiswein alemão. Todos os demais são da Califórnia, que neste ano teve condições privilegiadas!

Um ano ensolarado que favoreceu tremendamente o terroir do norte do Rhône (Hermitage e Côte Rotie). Eles são 9 dentre os 16 eleitos com a nota máxima. Latour, Lafite e Ausone (Bordeaux) engrandedem a lista!

Ficou famosa a resposta do professor Emile Peynaud, pai da enologia francesa, quando lhe perguntaram qual o melhor vinho que provara. “Um Pinot Noir, disse. E o pior? Um Pinot Noir, completou. Para muitos, a casta mais sublime e elegante que existe. A Pinot Noir é uma das uvas mais complexas do mundo. De nome charmoso, ela é a grande dama das uvas viníferas européias, particularmente na França de onde é autóctone. Assim demos início a nossa degustação de grandes vinhos de pinot noir pelo mundo, que foi realizada às cegas, com o seguinte resultado:

Este maravilhoso tinto é um Pinot Noir (100%) com muita personalidade. Muito refinado e profundo, com grande densidade de fruta madura e muita estrutura, é um tinto rico, elegante e cheio de classe. A família Labet é a maior proprietária deste que é um dos mais famosos vinhedos do mundo, com 6 hectares em 50,59 totais. Aproveitando-se da riqueza das condições ambientais e vinhedos plantados com altíssima densidade de 12.500 pés por hectare, o artista-vinhateiro Franz Haas molda vinhos espetaculares, que coadunam a profundidade italiana com a precisão teutônica. Vinícola boutique criada em 1989, com vinhedos e vinícola no Valle de Casablanca. Uma das mais modernas vinícolas do Chile, combina a alta tecnologia com a vinicultura tradicional. A Salentein trabalha em diferentes condições climáticas e de terreno, o que lhe propicia grande variedade de resultados com as uvas. A variação de -1° C a cada 100 metros de altitude influencia marcadamente a amplitude térmica, que é reconhecidamente fator de qualidade na região. O Vinho tinto ajuda na digestão de carne vermelha!

Mais uma pesquisa confirma os benefícios do consumo (moderado) de vinho para a saúde corporal:
Beber vinho durante as refeições além de ser prazeroso, ajuda a digerir a comida. É o que mostra um estudo realizado por pesquisadores alemães, publicado no jornal “Gol”, que relaciona a ingestão da bebida alcoólica com o aceleramento do esvaziamento no estômago.
Os elementos contidos no vinho estimulam a liberação de ácido gástrico. Em sua maioria elas são produzidas durante o processo de fermentação e removidas durante a destilação.
A pesquisa diz que a combinação vinho tinto e carne vermelha é perfeita. A proteína suaviza os taninos do vinho e o tinto ajuda a contrabalancear substâncias potencialmente prejudiciais, as gorduras oxidadas chamadas de MDA, ou malonaldeídos, liberadas quando a carne é ingerida. Uma porção de carne vermelha pode elevar essa gordura no organismo, mas combinada com uma taça de vinho, o aumento de MDA inibe a sua produção e facilita a digestão.
Segundo estudos, a digestão acompanhada da bebida descarrega uma quantidade maior de biles no início do intestino delgado. A bebida também favorece a digestão de carboidratos e ajuda a prevenir o desenvolvimento de úlceras pépticas (lesão no estômago ou duodeno).
